Tomato Basil Gin & Tonic
with Lemon Pepper Gin

To make the Lemon Pepper Gin, peel 3 lemons, reserving the peels.
Poke small holes in the lemons with a fork to allow the full flavor to release while infusing. In a 32 oz. mason jar place the 3 lemons, peels, and ¼ cup
black, whole peppercorns. Fill the rest of the jar with gin and let sit for
3 to 5 days in a cool dark place. To make the tomato basil gin & tonic, blend the heirloom tomatoes in a blender on a high speed for 2 minutes. Strain the seeds and pulp and reserve the tomato juice. In a large pitcher, mix the tomato juice, tonic water and lemon black pepper gin over ice.
Stir well. Garnish with chopped basil and lemon slices.
